SELONDA Sea Bream “Mediterranee”

SEA BREAM INGREDIENTS

  • 4 SELONDA Sea Bream 300-600g
  • juice of 1 lemon
  • 1 glass of white wine
  • 30g fresh butter
  • 20g olive oil
  • red pepper seeds
  • salt

SEA BREAM EXECUTION

  1. Rinse the (de-scaled, gilled and gutted) Sea Bream, pour salt on the exterior and interior of the fish and place them in a baking pan.
  2. Add the fresh butter, lemon juice, white wine and the red pepper seeds.
  3. Bake for approximately 30 minutes at 180 degrees Celsius in a pre-heated oven.

MEDITERRANEE SAUCE INGREDIENTS

  • 30g Kalmata olive slices
  • 20g capers
  • 40g cherry tomatoes
  • 50g olive oil
  • 50g fresh butter
  • broth from the baked Sea Bream
  • salt, pepper

MEDITERRANEE SAUCE EXECUTION

  1. In a small frying pan saute the Kalamata olive slices, cherry tomatoes and capers with the olive oil.
  2. Strain the broth from the baked Sea Bream into a pot to remove the other ingredients and warm it up.
  3. Add the sauteed vegetables and salt and pepper to the pot.
  4. Remove the pot from the stove as soon as it boils. The Mediterranee sauce is ready.
  5. Pour the Mediterranee saucee onto the baked Sea Bream.
  6. Serve immediately.
